Olivier Lebeau was born and raised in Belgium. He was an avid cyclist who has competed for a few years. Graduated from Boulanger Patissier program in 1987, and after mandatory military duty, he worked at the famous Patisserie Fransoo in Uccle (Brussels). He moved to San Francisco, and then to Vancouver in late 1994, where he opened Patisserie Lebeau in November 1995 on Cypress Street in Kitsilano, Vancouver.

Penny Lebeau grew up in Hong Kong. She graduated at California Culinary Academy’s Baking and Pastry Art Diploma program.


Established since 1995, Patisserie Lebeau not only introduced all varieties of Belgian waffles but also individual pastries, mousses, an abundant variety of viennoiseries, and other famous Belgian staples such as the Rice Pie Speculoos, Craquelins, etc. Back then, we also introduced the real European way to operate a bakery: pastries are baked fresh every morning, sell out everyday, and no food is wasted. An apology to those that come into the store late, as there may not be enough varieties to choose from. We recommend people to preorder their pastries one day notice in advance. Patisserie Lebeau grew while maintaining that artisan conviction.


Patisserie Lebeau is the first and only Belgian patisserie that produces all varieties of Belgian waffles from scratch in house in North America. In fact, our menu not only carries the Liège, Brussels, the filled waffles and galettes, but also waffles that were created in Vancouver and that you will not find in Belgium, such as the savory Brussels, or the varieties of flavors of Liège waffles. Every type of waffle requires a different baking mold. All of our equipment is authentic and of the highest quality. After years of hard work to promote the Liège waffle, it became a trend in Vancouver as well as every corner of the world. To keep up with people’s demand, we developed our Liège waffle manufacturing for groceries & food services.


We always believe that food has to provide a nutritional benefit; we achieved that by using just enough sugar, and butter. We use only the finest and natural ingredients, such as butter, unbleached flours, natural flavors, no preservatives. We peel and core apples and pears; no pre-made ingredients that come out of a bucket, no lazy ingredients like instant custard. We cook our own, and this of course leads our unique flavor “signature” that you only will find at Patisserie Lebeau. We keep our pricing policy modest, because we would like to see our customers coming more often and not just for special occasions. Most of our customers are European, world travelers, and loyal for over 20 years!


After 20 years in business, we really feel part of the community; our customers can rely on us for all their special occasion needs. Patisserie Lebeau is an official sponsor of the BC Ride to Conquer Cancer since 2009. We also support the 24 Hours Work Out, and sporting events like the Vancouver Open Ocean Swimming Club, and Cyclo-cross events.
