LIEGE WAFFLE

The Liege waffle originates from the Belgian City of Liege, near the Dutch and German borders. Made from a brioche dough (milk, yeast, butter, eggs, vanilla) this waffle has to rise (proof) before baking. In order to obtain the sugar crunch and caramelized coating, pearl sugar is added to the dough. All of our Liege waffles are baked fresh in the morning, just before opening the store, and throughout the morning. Natural flavors are added to obtain different varieties, from lemon zests to pecan, chocolate chips and more.

BRUSSELS WAFFLE

This popular treat holds its name from our capital city, often referred by North American as the Belgian waffle; it is only served in Fairs and selected Tea rooms, plain with icing sugar and fresh strawberries. Light crispy and chewy inside, we bake our Brussels waffles day-long, plain, or with fillings that are unique to Patisserie Lebeau. From ham & cheese to spinach and feta, they are the ideal savory breakfast for commuters, or the ideal sit down for a Saturday breakfast. We also sell them in 4 and 6 pack at our retail freezer.

FILLED WAFFLE

Only available at our retail, or in Belgium! Made with two layers of very thin brioche dough, and filled with cooked fruits and pastry cream. We also have a ham & cheese version!
